[food] comfort lamb ragu tagliatelle from fresh tomato in 20 minutes

Very similar concept for the sauce from my previous post on summer fresh tomato pasta ! but this time less summery and very comfort food-y and so easy~ 


What was used



1. Minced Lamb (can be pork or beef too I think)
2. Fresh vine tomato
3. Mushroom (really optional, I was using it here only coz I wanted to use it up)
4. spring onion
5. Dried chilli 
6. Worcester Sauce
7. Mint
8. Salt
9. Pepper
10. Oregano
11. Pine nut
12. Olive oil
13. Parmesan

This may seem like a long list of ingredients but there's essentially only 3 steps
  1. The tomato
  2. The sauce (everything is thrown in the blender)
  3. The meat (almost everything is thrown in the pan with toss and turning) 



Steps

1. Prepare a pot of boiling water, cut into tomato skins gently, then boil them til the skin looks like it's peeling off. (use the same pot big enough to cook the pasta later if you are lazy like me!) Then peel the skin off the tomato, chop it up slightly and throw them all in the blender!




2. Finely chop spring onion and mushroom (again, optional)
3. heat up a larger pan, add

  • oil
  • chopped spring onion (stir for a bit)
  • mint
  • dried chilli
  • minced lamb
  • mushroom









4. Toss and turn it a little bit more, so that it's almost cooked through out
5. Season with

  • Worcester sauce
  • Oregano



6. In the blender, there should be
  • the boiled, peeled tomatoes
  • pine nuts
  • some spring onion
  • grated parmesan
  • mint
  • salt
  • pepper
  • a dash of olive oil
  • dried chilli 
7. Then blennnndddd til it's mostly liquified 



8. Pour everything in the already done mince lamb mix





9. Turn on low heat, mix the sauce with the meat for a few minutes, season more to taste, (I'd usually add more chilli or worcester sauce. be careful on adding too much salt as the grated parmesan added later would also add more saltiness to the dish)

10. (this could have started before the blending) Cook the pasta according to the packet


11. Once the pasta is done drain the water out, and put it directly to the pan with the sauce and mix it up!


12. Add grated parmesan, mix and serve~ 


13. Plate, Serve, Munch, and Burp discretely!
